Yellowfin Tuna the Easy Way
Fish and salad when you want to look and feel great - yellowfin tuna with a dusting of pepper, chili powder and cumin over maiche. Maiche, also called lambs quarters, is a highly nutritious green I've only ever seen at Trader Joe's around here. Its texture is like watercress but it doesn't have the bite that watercress does.
This meal took less than 10 minutes.

Yellowfin Tuna Coated with Golden Flaxseed and Fresh Thyme
Flaxseed is best if freshly ground because you get the oils, but you can use flaxseed meal and still get the fiber. I combined this with fresh thyme. Fresh basil might work, and even minced rosemary if you used a swordfish steak. First wash and pat dry your fish, then dip in one lightly beaten small egg, then in your heavily-seasoned flax mixture. Flax can be bland, so I added Hawaiian sea salt, pepper, chili powder, and lots of thyme. Then I fried it up on medium in olive oil.
Believe it or not, the whole thing took less than 15 minutes to make. I'm going to Trader Joe's to buy up their supply of that yellowfin tuna.

Cumin Garlic Chicken with Grapefruit Juice
Smoky, tangy, rich. I laugh because all the chicken pics look the same, but I swear they're different! I squeezed one-half of a large grapefruit to marinate, and then I squeezed the other half into the pan after I took the cooked drumsticks out. I scraped up all the lovely bits on the bottom to make a really nice sauce.
