Avocado kale salad is even popular with children

4 large avocados
7 large bunches of lacinato kale
salt
oil and balsamic and/or red wine vinegar


Rip the kale stems out by hand and tear into bite size pieces.  Massage with salt oil and vinegar for several minutes, until soft.  Add avocado and mix.  Taste and adjust salt and vinegar if needed.

Eggs with liver and onions

I'm afraid to eat conventional organ meats in the US what with how we feed and inject our animals, so I'm taking the opportunity to nom nom on them in Italy.  So cheap, so good, chock full of
minerals.  And as always, I do enjoy eating my food in a sea of oil.

Have you tried nettles?

Nettles are very good for humans, containing tons of nutrients like calcium, A, C, and iron.  They've also been used forever as a treatment for arthritis, since the stingers will cause an anti-inflammatory response.  I found them for $2 a bunch at the Saturday Santa Monica farmers market, and I tried them on my sore neck and wrists, in my eggs, and with my shrimp.  It was fun and strange to gently tap them against my sore spots and feel the minor stinging.  I did feel some relaxation later, and I thought they tasted good with my normal eggs and greens breakfast, as well as with the curry shrimp and cabbage shown.
